Why is the sulfur dioxide content high in Shiitake mushroom?


We are sure that no sulphites were used during planting and processing of shiitake. Therefore, the most likely reason is background sulfur dioxide, which is found naturally in shiitake. It has been reported that different cultivation areas, cultivation environments and cultivation medium have a natural background effect on the sulfur dioxide residue in shiitake, the residue values may range from 20.36 to 176.5 mg/kg. Meanwhile, shiitake mushrooms are rich in sulfur-containing compounds, which will also affect the detection results of sulfur dioxide, so different testing methods maybe give different results.
